INGREDIENTS
For the salad:
- 4 ears of sweet corn, cooked
- 1 bell pepper, diced
- 1/2 cup grape tomatos, diced
- 1/4 cup red onion, diced
- 1/4 cup fresh basil, chopped
- 1/4 cup feta cheese
For the dressing:
- 3 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1/8 teaspoon salt
INSTRUCTIONS
- In a large bowl, combine corn, bell pepper, tomatoes, onion, and basil.
- Whisk together dressing ingredients and toss with salad.
