Gingerbread Cake Roll with Eggnog Whipped Cream
This turned out surprisingly well (I had never made a cake roll and was super afraid it would fall apart). I can’t tell if I overcooked my cake, or if it is the nature of gingerbread, but mine was kind of dense/not very moist – the gingerbread flavor was solid though. The eggnog whipped cream was also fantastic.
A soft gingerbread cake is filled with an eggnog whipped cream! I can guarantee that even non-gingerbread and non-eggnog lovers will LOVE this cake roll.

INGREDIENTS
FOR THE CAKE:
- 3 eggs
- 1/2 cup granulated sugar
- 1/4 cup no sugar added applesauce
- 1/2 cup molasses
- 1 cup flour
- 1 teaspoon baking powder
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground allspice
- 1 teaspoon ground ginger
- 1/2 teaspoon salt
FOR THE FILLING:
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- 5 tablespoons eggnog I used light
